When selected for the #MealsTogether Tyson campaign, I was SUPER PUMPED! It is not just my kids that love Tyson’s nuggets, but I think I love them just as much! When I arrived at Sam’s  Club to attend the demo, I was a little worried at first because I saw TONS of demos, but couldn’t find Tyson’s stand! I felt pretty dumb when I didn’t even think to look in the frozen food section :) LOL. Our demo lady was SOO much fun! She was having just as much fun making characters out of the chicken nuggets as we were! :) My friend Malary came along for the ride and since it was around lunchtime that we went, I believe she would have ate the entire plate of chicken nuggets if they would have let her!!! LOL. She is pregnant and free food sounds like heaven to her!

I was patiently waiting for the Tyson nuggets to cook in the oven, but unfortunately my kids were going crazy waiting for them to be finished! They have NOT learned the word patient yet :) I guess at age 5, 4, and 2 that is a little much to ask for right? hehe!

We decided to make two snowmen and one Mickey Mouse :) The Mickey Mouse was a bit tricky, but we managed! The ingredients we had out on the table was ranch, BBQ sauce, Ketchup, and Mustard! I even bought some paint sponges to make it more creative!

I was surprised that she did not jump in to devour the Tyson nuggets! Instead, she slowly licks the condiments from the nuggets! I don’t think she wanted to mess up her snowman she worked so hard on! Bless her heart! :)

My oldest daughter was REALLY taking her time with her snowman! I don’t think I have ever seen her concentrate so hard on something! If only she would concentrate on her school work like she did this snowman :) LOL

We had so much fun decorating the Tyson nuggets the night before, I decided to make Christmas themed biscuits the next morning for breakfast for Christmas Eve :) The kids LOVED it! :)

Chicken Parmesan Recipe – 30 minutes or Less!

I recently had a BLAST in the kitchen!!! Progresso sent me a kit to make the most DELICIOUS Chicken Parmesan and it was SOOO easy and super quick. It literally took me 30 minutes to make this :) Well, maybe a little longer because I was waiting on my chicken to thaw out! Check out the recipe and let me know what you think!!

  • Two cans of Progresso Recipe Starters

  • INGREDIENTS

    • 8 oz uncooked spaghetti
    • 1/3 cup Progresso® Italian style panko crispy bread crumbs
    • 1/3 cup shredded Parmesan cheese
    • 4 boneless skinless chicken breasts, flattened slightly
    • 2 cloves garlic, finely chopped
    • 1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
    • 1 cup shredded mozzarella cheese (4 oz)
  • DIRECTIONS

    1. Cook and drain spaghetti as directed on package.
    2. In large resealable food-storage plastic bag, mix bread crumbs and Parmesan cheese. Shake each chicken breast in bread crumb mixture; set aside.
    3. In 12-inch skillet, heat 2 tablespoons vegetable oil over medium-high heat. Stir in garlic; cook until garlic starts to brown. Add chicken breasts; cook 6 to 10 minutes, turning once, until browned. Pour cooking sauce around chicken; sprinkle chicken with remaining bread crumb mixture and mozzarella cheese. Heat to boiling. Cover; reduce heat to medium. Cook 5 to 8 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and cheese is melted. Serve with spaghetti.

Doesn’t it make you want to start thawing out your chicken and run to the store!!! It was SOOO delicious! My kids LOVED it!

Quick Recipe Idea for Supper

The hurricane is almost here so I prepared a quick but healthy supper tonight that was DELICIOUS!! I will admit that I did NOT make the chicken salad ( I bought it pre-made at our local market). I was preparing for the storm :)

I bought pistolette rolls, baked them in the oven for approx 10 min!

Then filled the bread with chicken salad and added the HEALTHY alfalfa  sprouts to give it that crunch!

It was great!

On the side I just chopped up a tomato and half of a cucumber, added a little salt and pepper, and a drizzle of italian dressing! Voila! Oh, wait… and Of course my diet coke! hehe! Just in case you were looking for something easy, healthy, and quick to make! Hope you enjoy!

Couponin’ On Coffee and family are back and Finally settled in our new home!

As many of you know, my family and I were in the process of selling our house and trying to find another one suitable to our needs! Between all of the showings and researching of new houses it became so hectic to keep up with the blog at the same time… I am so sorry I have been MIA. BUT I am happy to say we are finally settled in our new home and there is just a few more things to unpack! We went from a 1301 sq ft house to a 2440 sq ft house, so it was a huge change and such a blessing from God! We are so happy to have our lives  feeling normal again! It is me, my husband, our 3 kids, our lab, and our recent kitten we rescued at a burger king! I am so excited to be back into the blogging world! I have definitely missed it! I am excited to start sharing deals again and blogging about fun and exciting things!! ;) Below is a picture of our new home! It definitely has the space we have been looking for!! Hopefully everyone has been doing great!

Low Calorie Diet – Day 3

If you are interested in following my low – calorie diet, you can click here to start from the beginning. Today was not as busy so I actually had time to experiment with a few things! It is pretty amazing the things that start tasting really good after you have been depriving yourself of your favorite greasy foods for almost a week! lol!  My mom told me what she used to do with brown rice when she was dieting, so I decided to try that out. It was surprisingly pretty good!

Low Calorie Tasty Sandwich (178 Calories)

I am almost done with my Low Calorie – Day 3 post, but I wanted to type up a post about this sandwich I made yesterday that was REALLY good! I know you will probably think, what made it so good? I don’t have the answer to that! ;) I just know it was very tasty and when you are on a diet, things just always seem to taste better, right?

I used:

100% Whole Wheat Sandwich Thins – 100 calories (1 roll)
Butterball Thin and Crispy Everyday Turkey Bacon – 60 calories(4 Slices) *Could have used just 2 slices, but I was hungry* :)
Wishbone Ranch Salad Spritzer – 15 calories -10 sprays
Sliced Kosher Dill Pickle – 0 Calories
Raw Spinach – 3 calories
Salt – Pinch
Pepper – Pinch

Total Calories – 178 Calories 

Maybe it was the Ranch spritzer that made it really good… Who knows! And the only reason I didn’t add tomato was because I was out of them :( I was not dragging my kids to the store just for tomato!

Low-Calorie Diet >>Day 2

Day 2 of my low- calorie diet was VERY busy. My mother-n-law called and offered to watch my kids for the day, SO I definitely did not want to waste the day sitting at home. She came and picked up my youngest 2 and my oldest daughter and I hit the town. We shopped ALL day long! ;) It was a blast! So much of a blast that I forgot to eat breakfast :( Oops! BIG NO NO! I did drink my coffee though! ;0) Our favorite fast food is Chik-fil-a, so I was not sure how I was going to be able to get something healthy at my favorite place! I asked for a nutritional guide and started browsing. The Chik-fil-A grilled sandwich was only 290 calories! That worked for me because it is still really tasty! I wanted to see how many calories were in my favorite sauce (the polynesian kind) so I turned the guide over and found the section that was labeled sauces. Are you ready for this???? It was 110 calories FOR ONE PACKET! Do you know how disgusted I was with myself after I read that? Before yesterday, I would literally pour that sauce on everything I ordered! ;) Gross right? I feel like a pregnant woman when Chik-fil-a’s Polynesian sauce is mentioned. I crave it! You will be happy to know that I DID NOT ask for any. I did however, ask for a honey roasted BBQ packet that was only 60 calories! I know that is still a lot, but that is another weakness! Day 2 was not hard at all because I stayed busy all day! When I got home I found my package of workout clothes that UPS had delivered! I just downloaded the Couch to 5k app and plan on starting that soon! ;) If you want to see where I started on Day 1, click here!

Low Calorie Diet – Day 1

I have recently set a goal to lose 12 pounds by August! Before today, my diet, well I am not going to even use the word diet… because it was FAR from a diet, My daily Food consumption consisted of skipping meals, LOTS of chocolate, candy, and basically anything sweet that I could get my hands on throughout the day. Sometimes I would not eat supper until late at night until the kids were in bed. I always just wanted to eat at least one meal a day in peace and quiet :) While trying  on clothes yesterday, I realized I was only grabbing baggy clothes! I am tired of wearing baggy clothes! I am going to tell it like it is… I HATE Vegetables, I LOVE sweets, and the only exercise I get is chasing after my 3 kids. I have tried to motivate myself for the gym, for in-home videos, walking the block, etc… Nothing seems to work. It is not that I do not enjoy those things because I feel GREAT after, but I always find something else to occupy my time with (like finding great deals ;) After my first pregnancy, me and a friend tried eating between 700-800 calories a day for about a month! We lost weight and was able to continue a regular diet afterwards without being so hungry all the time. Obviously that was not the healthiest way for us to lose weight but it was effective and gave us a boost of confidence. It has now been 14 months since I have had my last child and I am definitely at a standstill when it comes to losing weight. I fluctuate between 135-138 all the time. I have decided to give myself a boost and try the low-cal diet again! I know how my body reacts to it and it has been effective for me. I am not at all encouraging you to only eat 700-800 calories a day! I am blogging about my OWN 30 day challenge to give myself motivation and give you ideas of low-calorie meals! Eating 1200 calories a day is much healthier so if you would like to hop on board with me and set  your own goal throughout these 30 days, feel free. I would suggest making sure you are taking a daily vitamin daily whether you are on a diet or not.  You can comment below with your starting weight and how many calories a day you plan on eating. We can help each other come up with ideas on different low-cal meals, snacks, drinks, etc. I will include what I eat on a daily basis, my weight updates, any exercise I do, and be honest about my cheat days… YES I will have a cheat day or two I am sure! lol. I do NOT know how to say the word NO sometimes! :)

Total – 527 calories *I will not eat this little every day, it was just a very busy day* :)
I was anticipating eating more calories today, but it was a busy day and I didn’t have time to snack :) Surprised that I stayed full the whole time but it is now 10:55pm and I am just fine!

Crock Pot -BBQ Pulled Chicken Sandwiches

I often hold on to recipes for a long time and never try them because I don’t think they would be very good! That is what happened to this recipe! I never thought Pulled BBQ Chicken would EVER be as good as pulled pork… Of course I knew it was way healthier though! ;) Maybe that is why I never tried it! LOL. Just kidding! Anyways, I decided to try this out because I had a ton of chicken I stocked up on a while back when it was on sale! It was DELICIOUS! My favorite part about it was how EASY and inexpensive it was! I am sure you most of you, especially moms, are always looking for QUICK recipes!

Ingredients for BBQ Pulled Chicken sandwiches

Crock Pot BBQ Pulled Chicken Recipe:

Ingredients

3-6 Chicken Breasts ( I used 3 and it made 10 sandwiches)

 1 BOTTLE -Sweet Baby Rays Sweet N Spicy BBQ Sauce (Or another BBQ Sauce you prefer)

3TBS – Worcestershire  Sauce

1TSp- Tony’s Seasoning (if you aren’t from the South, this would be called Season-all ;) !

1/4 Cup – Light Brown Sugar

1/2 Cup – Italian Dressing

Directions:

~Lay Chicken Breasts in Crock Pot

~Mix all Ingredients in Bowl

~Pour Mixture on top of Chicken Breasts

~Cook on LOW for 5-6 hours

~Toast some buns and serve!

My Kids made a Happy Plate :)
