Recipe: Shrimp Enchiladas

Ingredients:

Can of cream of mushroom
Can of cream of shrimp
Small can of chopped green chiles
Chopped green onions (handful)
Small chopped onion
1 bag medium frozen shrimp
1 cream cheese
1 jar of pimentos
3/4-1 cup shredded cheddar cheese
Package of flour tortillas
Season to taste

Preheat oven to 325.
Cook frozen shrimp and set aside.
Sauté green onions and onion.
Add soups, chiles, spoonful of pimentos and cream cheese.
Cook down until cream cheese is melted.
When mixture is almost done, add shredded cheese and cooked shrimp.
Grease baking dish.
Scoop mixture onto tortillas, roll and place seam down in baking dish.
Scoop any leftover mixture on top of tortillas.
Bake for 30 minutes.

Inexpensive way to store Jewelry

If you are looking for a cheap way to hang necklaces that you are finding on clearance this time of year, the type hooks/pegs below are definitely a way to save money! I do not have a TON of jewelry, but when I found a ton on clearance a couple weeks ago, I stocked up! You can see that post HERE if you missed it. (It also includes several tips on how to stay hip as a mom!)

Having an over the door hanger or hanging a small coat peg rack in your closet is a great way to store all of those long necklaces. Money Saving Tips on Throwing Birthday Parties

I am in the middle of planning my daughter’s first birthday and these are the supplies I have chosen!! I am SUPER excited about the decorations but SUPER sad that she already going to be one :( I already have a 3 and 4 year old that are growing like weeds!!! How can I make it stop? How old are your kids? Did the time flash before your eyes? :( Okay, I am going to stop getting emotional here :)

What do you think of the decorations? Our big thing around here is monkeys! It started with my son calling his stuffed monkey dodie, so we named the girl monkey dotti! Cute right? lol

Tips on how to save money throwing birthday bashes:

  **Hit the Dollar Store for the extras-Once I buy a set, I just go to the dollar store and get the solid color plates, forks, cups, etc that match and weed them in between the “real” character decorations! Saves A LOT of money! The dollar store has TONS of party supplies for a buck! So don’t waste your money buying entire sets! I will not be buying this entire set listed. I will just be buying invitations they have available, a set of plates, napkins, and cups! Everything else will come from the dollar store:)

**Use items that you have found on clearance, or candy you have gotten for free for goodie bags! I used all of the laffy taffy’s (filler items at Walgreen’s) that I had saved up for my oldest daughters’ birthday party in May. I also used pencils that I found on clearance for a few cents from Walgreen’s! I never buy the whole kit and kaboodle worth of goodie bag fillers! That is where it can get really expensive! I actually found clearance water bottles from CVS a month ago that I will be using next year for the goodie “gifts.” Fill it with some candy, and Voila – :)

**Make your own cake!! I know it sounds like a ton of work! BUT, I made my first “real” cake for my daughter’s party in  May and I saved so much money! It was also fun to say, “I made that.”(ONLY when people said how cute it was! hehe) I only made a little personal cake for my daughter and then made cupcakes for everyone else!  (You can also get cake mix DIRT cheap with coupons and sales)

**If you don’t want to feed everyone “real” food, don’t have the party around lunch or dinner! I always have it right in between so I am only responsible for providing small appetizers and drinks! Way cheaper than sandwich trays, hamburgers, hot dogs, etc! Guess you could call me a cheapskate! LOL

**Buy your gifts ahead of time!!  I never pay regular price for gifts! My kids get toys that are on sale, no questions asked! They already know this at ages 3 and 4! :) When you find a toy on clearance that you can put up for the following year, grab it and store it away!  (Hide it well)!

Hopefully this will help you save a bit of money on your next birthday bash!! My daughter’s bday is not until November 10th, but I am already planning!! Wish me luck and comment with any ideas you may have :) I would love to add them to my list of tips!!

A while back I had asked a bunch of you online what you all recommended to get organized! Several of you referred me to fly lady which was AWESOME! I still did not get everything I wanted to get done, done this past month! It seems like things just keep piling up and there is not enough time in the day! I better stop, because I will just keep going and going! LOL  Anyway, I ran across this website that I thought some of you might be interested in! What I cooked for dinner PLUS a $1.00/1 Coupon for Classico

I am constantly looking for easy cooked meals that do not require too many ingredients or most importantly, DIRTY DISHES! Let’s face it, our lives with or without kids are hectic these days! I have FINALLY found a spaghetti sauce that I am in LOVE with! I did not chop one onion, one bellpepper, or ANYTHING! I browned a pound of turkey meat and added two jars of sauce (easier for leftovers)! Add a couple pieces of garlic bread and a salad and you have yourself a SUPER EASY meal! I hate to admit this, but I feel that it tastes better than my homemade spaghetti :( LOL Anyways, I was looking for more coupons and I ran across one that I would share with ya! Kids can be SO creative

I just wanted to share with you all how creative my daughter was the other day. She always does things that make me wonder how a 4 yr old can figure that out and here was one of them! I walked in her room to put some clothes up and this is what I found! I am surprised her brother did not knock it down to be mean. LOL Anyways, just thought I would share! My favorite time to watch my kids is when they know that I am not looking :) If they know I am watching them they will just be silly! It is when I really see what they are capable of, when they don’t know I am glaring up at them out of the corner of my eyes! Don’t let these little things go unnoticed! What’s for Dinner?

Look what I have been cooking all day! Yummy stew! mmmmm..Oldie, but a goodie!

My recipe for the homemade stew….

  • 2.5 lbs of beef tips
  • 5-6 red potaotes
  • 2 sliced carrots
  • 1 chopped onion
  • 1 pack of MCcormick Stew mix
  • 1 tbs salt
  • 1tbs of garlic salt
  • 3 pinches of flour
  • 1tsp of pepper
  • 1tbs of onion powder
  • 3 cups of water (might have to add more as it cooks)
  • 1tbs of Tony’s Seasoning (You folks up North probably call it season-all! LOL)

 

1. Add a little oil to the bottom of your pot. Heat on medium. Add beef tips and throw the flour in while stirring making sure it coats well. Add your garlic salt, onion powder, and Tony’s. Stir until well mixed and let the outer edges brown.

2.Once edges are browned, add the water and stew mix, then stir. Let simmer on low, covered for 2 hours. Once beef seems tender, add your chopped potatoes, carrots, onions, salt, and pepper. Cover again and let simmer on low for another 1-2 hours. You might have to add a little more water as it cooks. I like mine to cook at least 5 hours until the meat can melt in your mouth!

This can also be thrown in the crockpot while you are at work

 

I also make cornbread to go with the stew. I know, I know… FATTENING! But I do not make this often! (This is me, justifying it )

Ingredients

  • 2/3 cup butter or margarine, softened
  • 1 cup sugar
  • 3 eggs
  • 1 2/3 cups milk
  • 2 1/3 cups all-purpose flour
  • 1 cup cornmeal
  • 4 1/2 teaspoons baking powder
  • 1 teaspoon salt

Directions

  1. In a mixing bowl, cream butter and sugar. *meaning, combine butter and sugar and using a mixer, soften it as much as you can* Combine the eggs and milk. Combine flour, cornmeal, baking powder and salt; add to creamed mixture alternately with egg mixture.
  2. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 400 degrees F for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

THIS IS A GREAT meal to freeze too! If you are wondering why I cooked so much, that’s why! We are able to have it for two nights, then I will freeze the rest and have it for another 2 nights later on. It is good for up to THREE months in the freezer!
